Sara Rivera is Nutritionist with a Master’s Degree in Sports Nutrition.  She is our DAB in Ecuador.

How long have you been working with Herbalife?

Since 2015.

 

What is your role with the Company?

I started by providing support at nutrition events, such as regional nutrition Congresses.   Also, I developed some nutrition education material, participated in some interviews on television, radio, as well as in the newspaper and on social media. This year (2018) Herbalife Nutrition named me as DAB member of Ecuador, and it allows me to do more activities, for example nutritional trainings with members and support with new projects with nutritionists.  Finally, I help Herbalife associates when they have questions about products.

 

Why did you choose nutrition as a career?

Because I always love to help people, and nutrition is the perfect way to help people in health, with the love of the food. Also, I think nutrition is perfect to help people have the balance of eating healthy and delicious.  When you forget about the word DIET, then it is possible to eat both healthy and delicious.

 

What is the best part of your job?

I’m a sport nutritionist, and the best part of my job is to motivate people by my own lifestyle, and to support them with recipes and training routines.

 

Everyone, even nutritionists, has a ‘guilty pleasure’ when it comes to food.  What’s yours?

I love pizza. Also, brownies with vanilla ice cream.

 

If you had just one piece of nutrition advice to give to someone, what would it be?

Don’t do a diet, just eat delicious foods, with colors and in balance.

If you weren’t a Dietitian/Nutritionist, what would you be?

It is difficult to answer because I love my career, but if I weren’t nutritionist I would be a food engineer to create many nutritional products, and also a professional athlete.

 

What is something that most people don’t know about you?

I have been a vegetarian for 4 years, and I train for triathlons. I did one Iron Man in Ecuador.  I love pets specially dogs.

 

Please provide your personal favorite Formula 1 shake recipe.

Cubes of ice

1 teaspoon of chia

Leaves of peppermint

1 small kiwi

2 scoops Herbalife Formula 1, Vanilla

1 cup water or almond milk

 

Can you please provide a recipe that could be part of a healthy meal that represents your country/region? 

 

Ecuadorian Fish or Shrimp Ceviche

 

2 cups small squares of fish or cooked shrimp

½ cup red onions diced very finely

1 tomato diced very finely

1 cup bell peppers, assorted colors, chopped

2 cups lemon and orange juice (about half and half)

1 bunch of cilantro (also known as coriander) chopped as finely as possible

Juice of one lime

A few tablespoons of oil (sunflower, avocado, etc), adjust to taste

Salt and pepper to tastePlace fish or shrimp pieces in a glass dish and cover with salt and lemon and orange juice.  from about 3 – 4 hours in the refrigerator, the fish should be completely covered by the juice.

  1. Mix the onions, tomatoes, peppers, and cilantro with the lime juice and let marinate for about an hour.
  2. Once the fish is “cooked” in the citrus juice, strain it and remove the liquid it “cooked” in. Mix the fish with the lime marinated vegetables, add salt and oil to taste.

Serve with chifles (plaintain chips), patacones (fried plantains) or popcorn.
